Guacamole is absolutely my “go to” dish when I’m making appetizers for friends, especially during the summer.  A great way to start any social gathering is with an ice cold beer or margarita, some spicy guacamole and tortilla chips.  The one thing I will say about this recipe, though, is that the measurements should never be absolute.  Adjust everything to your taste.  I actually add a bit more cumin and chili powder when I’m making it, so play with the ingredients and make it your own.

Wayne’s Texas Guacamole

Ingredients

3 lg Avocados
1 lg Tomato, seeded and chopped
1 med White Onion, chopped
1 lg Jalapeño, seeded and chopped
1/4 cu Cilantro, chopped
2 Limes
1/2 tsp Ground Cumin
1/2 tsp Chili Powder
1/2 tsp Salt
A few Cilantro Leaves for garnish

Method

Place tomatoes, onions, jalapeño, cumin, chili powder and salt in a large bowl. Cut the limes in half. Cut two thin slices from one lime half to use as garnish. Squeeze the juice from the remaining limes into the bowl. Slice the avocados in half. Discard the seed and scoop or squeeze the insides into the bowl. Mix thoroughly and test for seasoning. Place in a serving bowl and garnish with lime slices and cilantro leaves. Serve with tortilla chips.
