The was so much gorgeous fresh fruit at the market today I just had to do some experimenting. So, I combined white peaches and heirloom tomatoes to make a really fresh tasking bruschetta. The flavors really work well together. The right amount of salt was also key for me…just enough to brighten the flavors of everything, but no too much so that all I was tasting was salt. If you like this combination, definitely do some experimenting on your own. The combinations are limitless.

Heirloom Tomato and White Peach Bruschetta
makes about 4 cups
about 4 appetizer servings

Ingredients

2 med Firm Heirloom Tomatoes, diced
1 med Firm White Peach, diced
6 med Basil Leaves, chiffonade
3-4 sprigs Oregano, leaves removed and chopped
1/2 tsp Salt
1/2 tsp Fresh Ground Pepper
1 tbl Olive Oil
1 lg Clove Garlic, peeled and slightly smashed
6-8 slices bread, like a baguette sliced at an extreme angle

Method

Combine tomatoes, peach, basil, oregano, salt, pepper and olive oil in a large bowl. Stir to combine and cover with plastic wrap for about 1 hour.

When ready to serve, toast bread either in a toaster or in the oven. Once toasted, rub both surfaces with the smashed olive oil. Arrange slices on a platter.

Taste the tomato mixture and add additional seasoning if you like. Spoon over toast slices and serve.
