Pressure Cooker Red Beans and Rice
makes 8 servings

Ingredients

1 lb Smoked Sausage, sliced at an angle
1 lb Dried Red Beans, rinsed in cold water and drained
1 med Yellow Onion, chopped
2 tbl Cajun Seasoning
1 tsp Cumin
1 tsp Salt
1/2 tsp Black Pepper
2 Celery Stalks, split and chopped
1 Red Pepper, seeded and diced
1 Green Pepper, seeded and diced
3 Garlic Cloves, smashed, peeled and minced
2 tbl Dijon Mustard
6 cups Water
1/4 cu Flat Leaf Parsley, roughly chopped for garnish
4 cups Cooked White or Brown Rice

Method

Place the pressure cooker in browning mode and sear the smoked sausage until nicely browned on the edges, about 6-8 minutes. Add onions and stir for about 2 minutes. Add the beans, cajun seasoning, cumin, salt, pepper, celery, red pepper, green pepper, garlic, mustard and water. Cover and set the pressure cooker to low pressure for 45 minutes. After 45 minutes do a gradual release, about 20 minutes. Remove lid, stir and serve over rice and sprinkle fresh parsley on each serving.
