Pressure Cooker Maple Apple Cranberry Dessert
served with Vanilla Ice Cream
3 lg firm Apples (I use Granny Smiths), peeled, cored and sliced in large weges
2 tbl cu Golden Raisins
1/4 cu Water
1 tbl Brown Sugar
2 tbl Maple Syrup (I use my friend Tim Burton’s Bourbon Barrel Infused Pure Maple Syrup)
1 tsp Cinnamon
1/2 tsp Nutmeg
2 tbl Butter, cut into small dice
1 Cinnamon Graham Cracker, crumbled
Vanilla Ice Cream
Method
Mix apples and golden raisins in pot. Stir 1 tablespoon of maple syrup into the water and pour over the apples. Sprinkle brown sugar, cinnamon and nutmeg over the mixture and stir to combine. Top with butter pieces. Seal and pressure cook on high for 2 minutes. Quick release. Stir. Spoon into four bowls. Drizzle remaining 1 tablespoon of maple syrup. Top with ice cream and crumbled graham cracker.
