I do a lot of baking and make a number of pie crusts. But, I do my crust a bit differently than most. Rather than using a pastry cutter to cut the butter into the flour, I use a food processor with three ingredients: flour, butter and cream cheese. The cream cheese adds to the elasticity of the dough when working it before baking yet still yields a very flaky crust. For one 9″ pie crust, the ingredients are simple:
The Perfect Pie Crust
ingredients
1 1/4 cu All Purpose Flour
6 t/l Cold Butter, diced
3 oz Cream Cheese, torn into small pieces
method
Place the flour into the bowl of a large food processor. Add, butter and flour. Process until mixture forms a dough, about 30 minutes. Remove dough, combine any extra bits, and wrap in plastic. Refrigerate for at least 1 hour before using the dough.
