If it’s fall, it’s time for pumpkin recipes! These cookies are quick and easy to make and have a nice rich pumpkin flavor. I use 1 cup of pure pumpkin and 1 teaspoon of pumpkin spice. If you feel like you want to get even more of a pumpkin flavor, experiment with the amount of pumpkin spice that you use.

WayneBite Pumpkin Chip Cookies
makes about 48 cookies

Ingredients

1-1/2 cu Unsalted Butter, softened
2 cu Light Brown Sugar
1 cu Granulated Sugar
1 lg Egg
1 tsp Vanilla Extract
1 cu Pure Pumpkin
4 cu All-Purpose Flour
1 1/2 tsp Baking Soda
1 tsp Baking Powder
1 tsp Salt
1 tsp Pumpkin Spice
1 cu Sweetened Shredded Coconut
1 1/2 cups Old Fashioned Rolled Oats
12 oz White Chocolate Chips

Method

In a large bowl, mix together the flour, baking soda, baking powder, salt, pumpkin spice, coconut, rolled oats, and chocolate chips. Set aside.

Separately, cream together the butter, brown sugar, and granulated sugar in a large mixing bowl. Add in egg, pumpkin, and vanilla extra and mix until smooth. Gradually add in the flour mixture until fully incorporated. Wrap the bowl with plastic wrap and refrigerate for an hour.

Preheat oven to 350 degrees F. Place tablespoon size dollops on a baking sheet and bake for 15 minutes or until cookies are golden brown. Ovens vary widely, so your baking time could range from 12 to 18 minutes.

Remove cookies from the oven and cool on a wire rack.
