I love Buffalo Wings. A lot! lol. I’ve made them so many different ways, from baked, to deep fried, to grilled. But, now I think my favorite way to make them is with my air fryer. With the air fryer, you minimize the amount of grease and fat and the wings come out nice and crispy. In the video below I forgot to separate the drip pan from the basket. So, a little extra fat ended up in my wings. You don’t want to that with your version (even though these were still off the charts good). I put cayenne pepper in my seasoning to give the wings and extra kick. That’s totally optional. But, if really does kick up the flavor hit a bit.

I have a Cosori 5.8 quart smart air fryer. It’s wifi and Alexa enabled, so it’s easy to keep up with cooking times on my smart phone. But, I’m sure any air fryer would do a great job on this recipe.

Air Fried Spicy Buffalo Wings
makes about 18-20 pieces

Ingredients

2 lb Chicken Wings, drumstick and middle sections
1 tbl Baking Powder
1 1/2 tsp Cayenne Pepper
1 tsp Salt
5 tbl Unsalted Butter
1/2 cu Frank’s Red Hot Sauce, room temperature

Garnish

Carrots, sliced into 3” strips
Celery, sliced into 3” strips
Blue Cheese Dressing

Method

If you’ve purchased whole wings, cut them into three sections at the joints. You can discard the wing tips or freeze them and used them later to make stock. With the remaining middle and drumstick pieces, rinse them in cold water and then pat the dry with paper towels.

Preheat the air fryer to 380˚F. Mix together baking powder, salt and cayenne pepper. Toss the wings in the mixture to evenly coat. Spray the fryer basket and place the wings in a single layer, avoiding overlapping pieces. Air fry at 380˚f for 12 minutes. Shake the basked to flip the chicken pieces and air fry for another 12 minutes. Shake the basket one last time and increase the air fryer to 400˚F and air fry for 5 additional minutes to fully crisp up the chicken.

Just before the chicken is done, melt butter in a small saucepan or the microwave. You just want it melted, not sizzling. Transfer the butter to a large tightly sealable container and add in hot sauce. Once the wings are done, immediately transfer them to the container, make sure it’s tightly sealed, and shake the container vigorously until all pieces are well coated. Transfer to a serving platter and provide your guests with celery, carrots, and buffalo sauce.
