I’ve been working on Keto friendly recipes for a while and this one has become one of my favorites. It’s great any time of the year. The spice mix adds a nice hit of flavor, as do the red pepper flakes and jalapeño. But, you can adjust this recipe to your liking in a number of ways. I left out the cilantro because I have so many friends that don’t like it. Personally, I love the flavor it adds to latin dishes.

Keto Friendly TexMex Chicken Soup

serves 8 or more


1 lb Chicken Breast
2 tbl Avocado Oil (you can use Olive Oil as well)
3 tbl Unsalted Butter
1 med Onion, chopped
3 Garlic Cloves, peeled and minced
1 Green Pepper, seeded and chopped
1 Red Pepper, seeded and chopped
1 lb Tomatoes, peeled and chopped
2 lg Tomatillos, chopped
1 Jalapeño, seeded and chopped
Loredo Spice Mix (recipe below)
1 tsp Salt
1 tsp Pepper
4-5 cu Chicken Broth

For Garnish

1 bunch Cilantro Leaves, rinsed, dried and stems removed
Avocado, peeled and cut into 1” cubes
2 Limes, cut into wedges


Cut the chicken breast into 4-5 large pieces. Season with 1 teaspoon of pepper and place them in a medium sized pot. Add 2 1/2 cups of chicken stock and bring to a boil. Reduce to a simmer and simmer covered for 30 minutes. Remove from heat and allow to cool.

Heat avocado oil and butter in a large pot over medium heat. Add the onions and sauté for 4 minutes. Add garlic, red pepper, green peppers, tomatillos and jalapeño and continue to sauté until ingredients are tender, about 10 minutes. Keep the heat at medium to medium-low. Meanwhile, strain the chicken and reserve the stock. Using two forks, shred the chicken into small pieces. Add chicken and tomatoes to the pot. Measure the strained stock. Add additional fresh stock so that you have 4 1/2 cups total and add it to the pot. Bring soup to a boil then reduce to a simmer for 35 minutes. Add 1 1/2 teaspoons of salt to the soup and then taste for flavor. Add additional salt to taste.

To serve, arrange cilantro leaves, avocado cues and lime wedges on a platter. Ladle soup into individual bowls and pass the garnish elements so guests can add as much or as little as they like.

Combine the following ingredients

1 tbl chili powder
1/2 tsp garllic powder
1/2 tsp onion
1/4 tsp red pepper
1/2 tsp dried oregano
1 tsp paprika
2 tsp cumin
